Skillet Granola

Skillet Granola

Makes: 5 cups
Serving Size 1/3 cup

Ingredients

1⁄3 cup vegetable oil
3 Tablespoons honey
1⁄4 cup powdered milk
1 teaspoon vanilla
4 cups uncooked, old fashioned rolled oats
1⁄2 cup sunflower seeds
1 cup raisins

Directions

  1. Warm oil and honey in a skillet for one minute over medium heat (300 degrees in an electric skillet). Add powdered milk and vanilla.
  2. Stir in oats and sunflower seeds, and mix until coated with oil and honey mixture. Heat over medium heat. Stir until oatmeal is slightly brown.
  3. Take off heat. Stir in raisins.
  4. Cool mixture. Store in an airtight container (jar or plastic bag).

Notes

  • Try baking this dish instead. Once the first six Ingredients are combined transfer to a baking pan and bake at 325 degrees Fahrenheit for twenty minutes or until golden brown, stirring half way through.
  • Try adding any of these Ingredients: one teaspoon cinnamon, chopped nuts, dried fruit, wheat germ, or coconut.
  • Serve with milk, yogurt, ice cream, and/or fresh or canned fruit.
  • Honey is not recommended for children under 1 year old.

Banana Bobs

Banana Bobs

Ingredients

1 large banana cut into ½ inch slices
1⁄4 cup low-fat vanilla yogurt
2 Tablespoons oat and honey granola cereal

Directions

  1. Divide the sliced banana pieces between two plates.
  2. Place 2 tablespoons of yogurt onto each plate.
  3. Place 1 tablespoon of granola cereal onto each plate.
  4. Use fork to pick up a slice of banana and dip into the yogurt, then into the cereal.
  5. Refrigerate leftovers within 2 hours.

Notes

  • Try different flavors of yogurt.

Yogurt Parfait

Yogurt Parfait

Serving Size 1 cup

Ingredients

4 bananas
24 ounces low-fat vanilla yogurt
2 cups low-fat granola

Directions

  1. Peel and chop bananas.
  2. Take half of the fruit and split it between the bottom of six cups or bowls.
  3. Take half of the yogurt and split it between each cup or bowl, placing it on top of the fruit.
  4. Sprinkle each cup with 1/4 cup granola.
  5. Repeat layers.
  6. Refrigerate leftovers within 2 hours.

Notes

  • Drizzle with honey and top with chopped nuts.
  • Try other fruits, such as strawberries, apples, oranges, etc. (Use 2 cups fruit for the recipe.)
  • Use different flavors of yogurt, such as lemon or strawberry, or plain for less sugar.
  • Honey is not recommended for children under 1 year old.

Ingredients

1 cup low-fat vanilla yogurt
2⁄3 cup canned chopped peaches
2⁄3 cup fresh or frozen blueberries
2 Tablespoons granola

Directions

  1. Divide yogurt between 2 clear glasses or dishes.
  2. Spoon half of the peaches and blueberries on top of the yogurt.
  3. Sprinkle each sundae with granola.
  4. Refrigerate leftovers within 2 hours.

Notes

  • Substitute any fruit you have on hand: try sliced bananas, canned mandarin oranges, or grapes cut in half.
  • Try different flavors of yogurt like lemon or strawberry.

Berry Blast Off

Ingredients
1 cup sliced strawberries
1 cup low-fat granola
1 cup blueberries or other fruit
1 cup plain, low-fat yogurt

Directions

  1. Get out four small glasses. Wash all fruit.
  2. Divide the strawberries among the glasses.
  3. Sprinkle granola over the strawberries.
  4. Divide blueberries and place on top of granola.
  5. Spoon the yogurt on top of the blueberries.
  6. Enjoy! Refrigerate leftovers within 2 hours.

Notes

  • Substitute any frozen, canned/drained, or fresh chopped fruit for strawberries and blueberries.
