Ingredients

1 pound lean ground beef (15% fat)
1⁄3 cup chopped onion (1⁄3 medium onion)
1⁄3 cup green pepper, chopped
2 cups water
1 cup long grain white rice
1 teaspoon garlic powder or 4 cloves of garlic
1 Tablespoon chili powder
1⁄4 teaspoon salt
1⁄4 teaspoon ground pepper
1 can (15 ounces) diced tomatoes, with juice
1 can (15 ounces) whole kernel corn, drained (or about 1 1/2 cups frozen)
1 can (15 ounces) red kidney beans, drained and rinsed
1⁄2 cup grated cheddar cheese

Directions

  1. Cook ground beef, onion, and green pepper in large skillet over medium heat (300 degrees in an electric skillet) until hamburger is no longer pink. Drain excess fat from pan.
  2. Add water, rice, garlic powder, chili powder, salt, pepper, tomatoes with juice, corn, and beans.
  3. Cook, covered, for about 20 minutes or until rice is soft.
  4. Remove from stove top, sprinkle with grated cheese, and serve hot.
  5. Refrigerate leftovers within 2 hours.

Notes

  • Tip: Garnish this dish with a tablespoon of low-fat sour cream.
  • Flavor boosters: green chilis, jalepeños, more garlic, and other seasonings.
  • Make extra! Leftovers make a great filling for tacos, burritos, filling for stuffed bell peppers, or as a topping for baked potatoes.

4 cups water
1 can (14.5 ounce) diced tomatoes with liquid
1 onion, chopped
3 cloves garlic, minced or 3/4 teaspoons of garlic powder

1 cup quick brown rice, uncooked
1 can (14.5 ounce) kidney beans, rinsed and drained
3 cans (8 ounces each) tomato sauce
1 package (16 ounce) frozen, sliced okra
salt
 and pepper to taste

Directions

  1. In a large pot, combine the water, diced tomatoes, onion, garlic, and seasonings.
  2. Bring to a boil and reduce heat; simmer uncovered for 5 minutes.
  3. Add rice, beans, tomato sauce, and okra. Simmer uncovered 8-10 minutes or until vegetables are tender.
  4. Add liquid as needed for desired consistency.
  5. Refrigerate leftovers within 2 hours.

Notes

  • Substitute 2 cups cooked rice for the quick rice and reduce water by 1 cup.

1 cup grated cheddar cheese

Directions

  1. Brown meat and onion in a large skillet over medium-high heat (350 degrees in an electric skillet). Drain fat.
  2. Add beans, tomatoes, corn, 1 tablespoon chili powder, cumin, garlic powder, oregano, salt, and pepper.
  3. Reduce heat to low (250 degrees in an electric skillet), cover, and heat thoroughly.
  4. As chili heats, mix cornmeal, salt, sugar, and 1 teaspoon chili powder with water in a small saucepan.
  5. Cook over medium heat, stirring constantly until thickened, about 2 minutes. Add cheddar and mix well.
  6. Spread cornmeal mixture over chili mixture.
  7. Cover and cook over low heat, with lid slightly ajar, until topping is set, about 10 minutes.
  8. Refrigerate leftovers within 2 hours.

Ingredients

1 medium butternut squash, about 1 1/2 to 2 pounds
1 1⁄2 Tablespoons oil
1 medium onion, chopped (about 1 cup)

2 cans (4 ounce each) diced green chilies (see Notes section)
1 cup grated cheese (try Monterey jack)

Directions

  1. Peel squash, cut in half and remove seeds. Cut the squash into 1/2 inch cubes.
  2. In a large skillet, heat oil over medium heat (300 degrees in an electric skillet). Add onions and cook, stirring for about 3 minutes. Add the squash, salt and chili powder.
  3. Cover and cook, stirring occasionally, about 10-12 minutes. Stir in chilies and cook about 3 minutes.
  4. Sprinkle with cheese and cover until cheese melts, about 2 minutes.
  5. Serve hot. Refrigerate leftovers within 2 hours.

Notes

  • Prepare fresh chilies by roasting 1 pound fresh green poblano chilies (about 4 whole peppers) either by placing them over a stovetop gas flame or by roasting under an oven broiler. Turn them frequently until all sides are charred black, about 7-10 minutes. Allow peppers to cool, about 15 minutes. Remove the stems and seeds and chop.
  • Like more spicy flavor? Use more or hotter chilies.

1 can (10.5 ounces) condensed tomato soup

Directions

  1. In a large skillet over medium-high heat (350 degrees in an electric skillet), brown meat and onion.  Cook on medium-low heat (275 degrees in an electric skillet) for 5 minutes. Stir often. Drain grease from pan.
  2. Add chili powder and stir. Cook for 3-5 minutes.
  3. Add tomatoes, drained beans, and tomato soup.
  4. Add 1 soup can of water; stir and simmer for at least 30 minutes.

3 large baking potatoes
3 Tablespoons vegetable oil
1 1⁄2 teaspoons paprika

Directions

  1. Preheat oven to 450 degrees F.
  2. Scrub potatoes well but do not peel.

Ingredients

3 cups sliced carrots (about 6 to 8 fresh) or two cans (14.5 ounce each) or frozen (16 ounces)

Directions

  2. Drain carrots if needed. Put carrots in a medium bowl. Mash with a fork until smooth.
  3. Stir in butter, honey, salt and pepper.  Add seasoning if desired.

Notes

  • Add your favorite seasoning! Try one of these: chili powder, curry powder, onion powder, dried thyme, and dried sage.

Directions

1 tomato, chopped

Directions

  1. Mix eggs, milk and seasonings in a bowl.
  2. Heat oil in skillet over medium-high heat (350 degrees in an electric skillet).
  3. Stir in the eggs and cook until firm.
  4. Warm the tortillas on a griddle, or wrap in foil and heat in the oven.
  5. Warm the refried beans in a separate pan.
  6. On each tortilla, layer 1/4 of refried beans, eggs, cheese, and tomato.
  7. Roll the burrito, cut in half, and enjoy!

  • Try your favorite salsa in place of the tomato.
