Kiwi Pineapple Slaw

Ingredients

1 cup pineapple in juice, undrained
3 cups cabbage, finely shredded (1/2 head)
1 1⁄2 cups kiwi, peeled and chopped (about 3 medium kiwi)
1⁄2 cup celery, chopped (about 1 stalk)
1⁄4 cup raisins
1⁄4 cup light mayonnaise

Directions

  1. Drain pineapple, reserving 3 Tablespoons juice. Cut pinepple into bite-sized pieces, if needed.
  2. Combine drained pineapple, cabbage, kiwi, celery, and raisins in a large bowl.
  3. Stir reserved pineapple juice into mayonnaise until smooth. Add to cabbage mixture, tossing gently.
  4. Refrigerate leftovers within 2 hours.

Ingredients

5 cups thinly sliced cabbage (about 1 1/2 pounds or 1⁄2 small head – try a mix of red and green)
1⁄2 cup dried fruit (cranberries or raisins work well)
1 carrot, washed, peeled and grated
1⁄3 cup vinegar
2 Tablespoons sugar
2 teaspoons vegetable oil
3⁄4 teaspoon salt
1⁄2 teaspoon black pepper
2 1⁄4 cups thinly sliced apples
1⁄4 cup chopped nuts, toasted

Directions

  1. Mix cabbage, dried fruit and carrots in a large bowl.
  2. In small bowl, mix vinegar, sugar, oil, salt and pepper.
  3. Pour vinegar mixture over cabbage mixture.
  4. Add apple and nuts just before serving. Mix well.
  5. Refrigerate leftovers within 2 hours.

Ingredients

4 cups mixed cauliflower and broccoli florets (fresh or frozen)
1 cup celery, diced
1⁄2 cup onion, diced
1⁄4 cup sweet bell pepper, any color
1⁄3 cup lite mayonnaise
1⁄3 cup nonfat plain yogurt
1 Tablespoon prepared mustard
1⁄8 teaspoon each salt and pepper
1⁄4 teaspoon dried dill weed

Directions

  1. Thaw frozen cauliflower and broccoli and drain liquid. If using fresh vegetables, cook first until barely tender.
  2. Combine cauliflower, broccoli, celery, onion and bell pepper in serving bowl.
  3. In a small bowl, mix mayonnaise, yogurt, mustard, salt, pepper and dill.
  4. Stir dressing gently into salad. Chill before serving.
  5. Refrigerate leftovers within 2 hours.

Ingredients

4 bell peppers
1⁄2 medium onion
2 1⁄2 Tablespoons vinegar

Directions

  1.  Wash bell peppers and remove tops and seeds. Cut into ¼-inch thick strips. Peel onion and slice into thin strips.
  2. In a large mixing bowl, stir together vinegar, oil, salt and pepper.  Add bell pepper and onion and gently stir to coat. Cover and refrigerate for 30 minutes before serving.

1 1⁄2 cups cooked white beans (1 can - 15.5 ounces, drained and rinsed)
1 3⁄4 cups diced tomatoes (1 can - 14.5 ounces with juice)
1 Tablespoon italian seasoning
3 cups kale, chopped (fresh or frozen)

Directions

  1. In a saucepan over medium-high heat, sauté onion and garlic in butter or margarine until soft.
  2. Add broth, white beans, and tomatoes; stir to combine.
  3. Bring to a boil; reduce heat, cover, and simmer for about 5 minutes.
  4. Add the kale and Italian seasoning. Simmer until kale has softened, 3 to 5 minutes. Serve warm.
  5. Refrigerate leftovers within 2 hours.

Ingredients

6 ounces spinach (about 7 cups)
3 oranges
1 1⁄2 cups strawberries, halved
1 cup walnut pieces (toasted if desired) 

DRESSING
1 teaspoon sugar
1⁄4 teaspoon paprika
2 Tablespoons orange juice (juice from 1/4 orange)
1 Tablespoon lemon juice
1 1⁄2 teaspoons vinegar
1 teaspoon finely chopped onion
2 Tablespoons salad oil

Directions

  1. Wash and dry spinach, tear into pieces, and chill.
  2. To prepare orange: Cut off peel and membrane of outer part of the sections. Using a paring knife gently cut out sections from membrane edges. You end up with orange sections with no outer membrane.
  3. To make dressing: Combine all ingredients in a jar and shake well or blend in a blender.
  4. Right before serving, toss orange and strawberries with walnuts and spinach. Add dressing to coat salad. Serve immediately.
  5. Refrigerate leftovers within 2 hours.

Notes

  • Freeze extra lemon juice to use later.

DRESSING
2 Tablespoons teriyaki sauce
2 Tablespoons vinegar
1⁄4 teaspoon garlic powder
1⁄8 teaspoon each salt and pepper
1 1⁄2 teaspoons sugar
1 Tablespoon vegetable oil

Directions

  1. In a large bowl, mix together teriyaki sauce, vinegar, garlic powder, salt, pepper, sugar and vegetable oil.
  2. Add cooked pasta, spinach, dried cranberries, sunflower seeds, mandarin oranges and cilantro or parsley, if desired. Mix well. Cover and chill until ready to serve.
  3. Refrigerate leftovers within 2 hours.

Notes

  • Try a low fat Asian Salad Dressing from the store to replace the dressing ingredients.

  2. Add cooked meat, beans or tofu and cooked rice to skillet and heat through.
  3. Divide rice mixture between two bowls. Top with salsa, cheese or sour cream and serve warm.

Ingredients

4 medium whole wheat tortillas
1 cup grated cheese (try cheddar or jack)
1 cup pear cubes (fresh or canned/drained)
1⁄2 cup finely chopped green or red peppers
2 Tablespoons minced onion (green, red, or yellow)

Directions

  1. Lay two tortillas on a clean cutting board or on two plates.
  2. Place 1/4 of the cheese on each tortilla.
  3. Divide pears, peppers, and onion between the two tortillas.
  4. Divide the remaining cheese between the two tortillas. Top with remaining two tortillas.
  5. Heat a skillet or griddle to medium (300 degrees in an electric skillet). Place one quesadilla in pan. Cook for 2-4 minutes, or until bottom of quesadilla begins to look a little brown.
  6. With large spatula, gently turn quesadilla over and cook the other side until a little brown, 2-4 minutes.
  7. Gently slide quesadilla onto plate. Cook the second quesadilla.
  8. Cut each cooked quesadilla into 4 pieces and serve.
  9. Refrigerate leftovers within 2 hours.

Notes

  • Put pear cubes on a paper towel for a couple of minutes to help dry them out. This will help your quesadilla stick together!
  • Out of pears? Try diced fresh apples, halved grapes, or even sliced bananas.

  1. In a medium saucepan, heat vegetable oil over medium heat. Add garlic and cook for 1 minute. (If using garlic powder, omit oil and skip this step).
  2. Add tomatoes, lemon juice, salt, pepper and red pepper flakes, if desired. Cook until heated through, stirring occasionally. For a thicker sauce, cook an extra 10 to 20 minutes to allow more of the liquid to evaporate.
